The onset of the spring-summer period, most people associate with the beginning of the kebab season. Cooking on the grill or in the cauldron has its own twist - the food has a light smoke aroma. Often, when leaving for nature, people begin to look for interesting recipes that are suitable for cooking outdoors. Summer departure will be much more awaited with the new menu.

Champignons in sour cream

This dish can be not only an excellent side dish, but also to act as the main one. It is ideally combined with baked potatoes or with a standard kebab. Mushrooms are very nutritious, and their preparation will not take much time. You will need:

  • 0.5 kg of champignons;
  • 1 pack of 25% sour cream (200 gr);
  • 0.5 tsp. salts;
  • 0.5 tsp. seasonings Hmeli-Suneli.

Fresh mushrooms must be well washed and cleaned of dirt. Let the water drain. To speed up the process, you can blot them with a paper towel. This manipulation is best done at home.

Already on the spot, mix fat sour cream with fragrant spices. In the resulting mixture, dip the mushrooms.

The next step is to string the mushrooms on skewers or skewers and place over the coals. Alternatively, you can use the grid, placing the mushrooms on top.

Frying time should not exceed 15-20 minutes. During this time, the crust is already roasted, and inside the mushrooms will be very juicy.

Smoked Shrimps

A simple and at the same time exotic barbecue can be made from shrimps. The best of the so-called "royal". They are convenient to stick on skewers or simply spread out on the grill.

For cooking you need to buy:

  • 1 kg of shrimp;
  • 1 lemon;
  • 1 garlic clove;
  • 1 tbsp. l soy sauce;
  • salt and seasoning to taste.

The first step is to cook the marinade. In a blender, you must chop a whole lemon with zest, peeled garlic cloves, soy sauce and spices.

The next step will be the preparation of shrimp, namely, cleaning them from the shell, after which they need to pour the resulting mixture. To juice completely soaked the meat will take several hours.

After 2-3 hours pickling shrimps are strung on skewers and roasted until an appetizing crisp is formed. If the company prefers sweet sauces, then instead of the above marinade, you can use teriyaki sauce mixed with sesame seeds.

Attention! When stringing prawns on skewers, it is recommended to alternate with pineapple slices.

Vegetable skewers

Not a single picnic is complete without vegetables, and this dish will perfectly fit into the diet of people sticking to the healthy diet that is so popular today. Vegetables will be a great addition to the two previous dishes.

Vegetables are cut into rings of medium thickness and placed over hot coals. It is important not to forget their salt and pepper.

Cherry tomatoes, eggplants, zucchini, corn and paprika are suitable for cooking. Prepared vegetables are recommended to sprinkle with olive oil.

Bacon Potatoes

What gatherings around the fire without nourishing potatoes? As a substitute for the usual dish "in uniform", you can make very juicy potatoes, which will become both an independent dish and a complement to meat.

Would need:

  • 6 medium sized potatoes;
  • 12 bacon strips;
  • 300 grams of bacon (smoked or homemade);
  • salt to taste.

Potatoes can not be peeled. It is cut into thin ringlets, and then put on a skewer, alternating with pieces of bacon.

The resulting "battery" must be slightly salted and wrapped in bacon. Next, wrap everything in foil.

Holding the skewer over the coals, it must be constantly rotated so that the juice does not flow out. Thereby you avoid drying out.

Baked fish

Rare fishing, crowned by a catch, will do without a hearty lunch. Fish is often cooked in fish soup, but this requires a large container, which is not always convenient to take with you. A baked fish will be hearty, but a light dish. Cooking does not take much time.

If you have just caught a fish, then it must be cut clean. To get rid of the specific smell of the river or lake, you can put lemon slices inside. Prepared fish is placed on the grill.

If you purchased 1 kg of salmon, then for its preparation you will need:

  • olive oil;
  • lemon juice;
  • salt to taste.

Before hot fish is cut into slices 3 cm thick, salted and sprinkled with juice. As soon as a light crisp crust forms on the surface, the fish must be removed from the coals and sprinkled with oil.

Attention! Before serving, prepare a sauce of 200 grams of sour cream mixed with finely chopped garlic (2 cloves) and greens.

Kebab

This is a favorite dish in the Caucasus and Central Asia. Juicy meat is so tasty that you want to cook it again and again. In addition, it does not require a lot of work and time. The classic recipe involves the use of lamb and fat-tailed (mutton) fat, but if such meat seems to be fatty or specific, then pork, beef or chicken mixed with pork lard will do.

It is necessary to prepare:

  • 1 kg of minced meat, in which you can combine different types of meat;
  • 300 grams of fat;
  • 100 grams of onions;
  • 100 grams of green onions and greens;
  • salt and spices to taste.

The process of preparation has nuances. In the first place for the preparation will not require eggs and flour or bread.

Onions must be cut it into small cubes, but do not skip through a meat grinder. Otherwise, it will give out too much juice.

Then chopped greens. Everything is mixed and salted. The mixing process can rather be called beating. Take the stuffing in your hand and throw it in the bowl with force.

Doing this procedure, you can notice the selection of juice. It needs to be drained so that the stuffing becomes plastic and sticky. To keep the mixture from sticking to hands, periodically wet them in salted water.

After all the manipulations, the stuffing is removed for an hour or two in the fridge. When mounted on a skewer, sausages should be formed. They must be placed over hot coals and constantly turned over so that the juice stays inside.

Banana shoes

If there are couples with small children in your company or you have to go to a shish kebab with your family, be sure to take a note of the sweet kebab. Children eat delicacy for both cheeks.

To prepare you need to stock up:

  • bananas by the number of picnic participants;
  • marshmallow (you can take a regular marshmallow);
  • chocolate;
  • cinnamon or coconut chips at the discretion of the individual.

The peel of a banana is cut along, the banana “boat” is placed on the foil and stuffed with finely chopped chocolate and marshmallow. If you like cinnamon or coconut, you can sprinkle them on the received boats, which are then wrapped in foil and fried, until the filling has melted. As a rule, it takes no more than 5-7 minutes.

As you can see, the next spring-summer gatherings should not be limited only to kebabs, especially if the company has a person who has decided to diversify the menu. This is not a complete list of dishes that are grilled. By showing ingenuity and ingenuity, you can move the cooking of many familiar dishes to the street, and their main seasoning will be a friendly company and the aroma of a fire.
